It does appear that you are experiencing conflicts in your firmware following the update.
You don't say what you updated from and to, but generally the advice when changing firmware (such as gingerbread to ICS -and back) is to factory reset and clear cache from Recovery Mode.

But before that try going to Settings > Applications > All and find your camera app and Clear data - this does not remove your pictures but resets the camera settings.

With your signal, turn off phone and remove battery and sim card for 10 minutes.
While waiting just check that the sim holders is clean as is sim card.
A visual inspection rather than wiping is all that is required unless you see some debris.

replace battery and reboot should give you a cleaner network link and often improves the reception.

If that all fails then you may want to consider a factory reset:
To get into Recovery (and to see the options)
Press and hold volume up + Home button + Power button until in blue writing of Recovery Screen.
Here you can use volume up/down to select and Power button to action.

WARNING: Factory reset does delete your data including contacts.
You can back up both using Kies, and also if on ICS you can go to Settings on your phone and make sure Backup and Reset (to Google servers) are ticked.

If all that fails to improve things, then with your camera it could be a hardware fault, so would suggest returning and replacing/repairing as the phone will be under warranty (2 years)

O2 are having a few issues lately in certain areas. It might not always be accurate, but you can check the signal for your location here http://status.o2.co.uk/
Where are you saving your pictures to, phone or SD Card ?
Have you tried looking at the photo details to see if there is any file corruption going on?
Can you view them OK on a PC ?
