You would need to use a 3rd party launcher like Apex or Nova.

Didn't even know there was a shortcut to Siri using the home button. How come you press the home button so many times?
You haven't just come over from iPhone have you?
It's not Siri, it's Vlingo..... a double click of the home button activates voice command if using TW launcher. Can be turned off in Nova launcher and I guess in other 3rd party launchers too....

If it annoys you, and it will if you're not double clicking you select, then you could always remove it as it can be reinstalled via Play Store.
You will have to be rooted though.
I can understand it would be highly annoying, sounds like it's a problem with the button.
I would be more inclined to root the device and remove/freeze S-Voice, a 3rd party launcher would be the easiest way to deal with it. i would still get the phone checked out, you would still have a problem with the button wither way.
How on earth did you get Siri onto your galaxy?

Don't know if the OP will read this but may be of use to others....
I have the exact same issue with mine, the "what do you want to do" message used to drive me crackers.
I got over it by going into Settings>Applications>Voice Command and pressing "Force Stop" and "Clear Data".
Now all i get when i double press is the samsung disclaimer screen and no annoying voice. Not ideal but it works for me and is an easy fix.
I'm sure i'm not pressing the button twice, i also think the home button is going faulty.
