I am having the same problem There seems to be a pattern that after taking it off charge for the night it works fine but an hour or so later I find it has switched off. I then need to remove the battery to turn it on again. It then works fine for hours. Another possible issue is that it some times happens a few minutes after I have removed it from the car dock. I have a suspicion it may have something to do with charging. I have two batteries - same problem with either battery - so not the battery. Is there any app out there that can track which apps were running at the time of the reboot ? That would maybe help to pinpoint the problem.
If you are rooted you can view your system dump files. Logcat should also record any issues with the system.

i had the issue with my galaxy switching off starting with gingerbread, but thankfully not too often, then when i updated the firmware to ICS it seemed to do it several times on some days, then not again for a few days etc etc. basically, i found that if i unticked the box that stopped apps from updating automatically, it stopped the issue of switching itself off. in fact, not done it once.

also, if you have an aftermarket case/cover, make sure it's not pressing on the battery as this can have an adverse effect too
I had this random powering off, sometime 2-3 times per week. I routinely tended to use my phone as normal during the day, and pop it on charge overnight as I went to bed. I realised that I was never fully discharging the battery was just doing what is referred to as a 'common' charge (where you charge the phone when the battery remaining is more than 20%). I think this was the source of my problems, the battery was never getting conditioned properly.
Once a week or so, I started doing a full charge (letting the battery drain down to below 20%, the lower the better) and THEN popping it on charge.
Since doing this, my random 'power offs' seem to have stopped.
I hope this helps some others with the same problem as it used to drive me crazy....
