You can do a factory reset on a rooted Galaxy S.
There are 2 ways to do it.
    1. power phone off and wait for it to vibrate.
Next press and hold the following keys, Volume Up + home + Power. When the phone boots the the Samsung galaxy S boot screen release just the power key. Using the volume up/down keys navigate to wipe data/factory reset and then press the power or the home key to ok the action.

    2. menu>settings>privacy>factory reset.

You don't need to remove root to reset your phone or flash new firmware.

You do need to disable/turn off/reverse any EXT4 file system lagfix before flashing new firmware.
I could be wrong, I usually am. (Because it's only a phone)

Unless you're flashing a DarkyROM (or one of Ficeto's Base ROMs) in which case it's better to leave any lagfixes active.
