Open the app drawer. Press Menu > Edit, then drag icons you don't want off the dock and drag the ones you want on to it. You can't move the apps icon from the dock as that's fixed.
Check the personal dictionary in case you've added the spellings without the apostrophe by mistake - it will use what's in the personal dictionary before anything else.
