After rooting the phone, do apps get installed on the memory card rather than the app storage space in the phone memory? Do we need to partition the memory card like explained here? (http://forum.xda-developers.com/showthread.php?t=462882)

Do the custom roms change this? In MoDaCo online kitchen it lists a lot of apps like for example Calculator installed to /system partition - What is the /system partition? Is that the partition on the memory card?

no, the partition is for the internal SD card, the wording is hard to follow, when they say 'internal SD card' they mean the phones built in memory (8GB/16GB). and you cant install things to the SD card, even on MoDaCo custom rom, however in Android 2.2 you will be able to. there are ways to install apps to your memory card thru a hack (like the one in your link) but you wont find that hack built into MoDaCo R1 or R2, youll have to do it yourself.
