Im from holland an i have a samsung galaxy s.

my version is JF3 but i wants JM5

But i cannot upgrad it to jm5 because my phone has simlock.

Somebody now how i can upgrade to JM5 and unlocking my phone ?

People have upgraded sim-locked phones. The sim-lock will remain but you will have the new firmware. You will only lose the carrier specific software which is probably a good thing.
